Everything is healthy in moderation
Eating one thing that is deemed ‘healthy’ does not in turn make you ‘healthy’. Just like one workout will not make you thin and one piece of cake will not make you fat.
Eating a balanced diet of 80% whole, nutritious foods (think foods NOT in a packet or packaged) with 20% treat yo’self type foods.
My favorite snack meals are those that are QUICK & EASY – because I am ultimately lazy and not a huge fan of cooking.

Nutrition: 6g Carb / 11g Fat / 20g Protein
What you will need:
- 1 small onion – chopped
- 2 cloves garlic – chopped
- 200g or a small bag of spinach or spinach leaves – chopped
- 5 egg whites
- 1/3 cup rice milk
- 1 tsp baking powder
- 1 tblspn almond meal or coconut meal
- fresh herbs – basil, parsley, chives or rosemary
- 55g crumbed danish fetta
- 1tspn cocnut oil
- Muffin baking dish coated in cocnut oil so the muffins don’t stick
Preheat the oven to 375F (190C). Grease a muffin tin with ½ tsp. coconut oil.
Heat a non-stick pan with ½ tsp of coconut oil over medium heat. Cook the onions and garlic until soft. Add the spinach and 1 tbsp. water and cook until wilted. Once cooked, set aside.
Whisk together eggs, egg whites, milk, baking powder, and season with salt and pepper. Stir
in the spinach mixture and add the crumbled feta cheese. I also add in a tablespoon of seeded mustard just because I like the taste!
Divide the egg mixture evenly between 12 muffin cups. Bake until golden brown and firm
to the touch, about 25 minutes.
Allow to cool, and let the family enjoy. Quick and easy if you are always on the go!
Have as a snack or with a side salad.
